3-Stage Sharpening System

The Chef’sChoice Model 290 sharpener uses a 3-stage system for sharpening all types of knives. The first two stages are electric and both sharpen and hone the knife’s edge using 100% diamond abrasives. The first stage is dedicated to all 15 degree knives while the second stage is for 20 degree knives.

The third stage is used for polishing the edges after they’ve been sharpened in Stages 1 or 2, as well as for sharpening serrated blades. Similar to a barber’s strop, Stage 3 uses revolutionary flexible stropping/polishing disks for an extremely sharp and flawless edge.
